It can be done. If you're only looking at creating shared workspaces, discussion groups, and such, or are a fairly small business (<150 employees or so), the Outlook/Exchange/NT setup can work fairly well.
However, at this point in time, I wouldn't recommend this setup for more ambitious KM projects. If you have much legacy data, or very large databases (250+gigabyte), you'll never see the end of your integration problems.
At least, that's my experience with the capabilies of the Exchange server. It's great,but only in a very limited context.
