Hi Martha
Once you have prioritized your future knowledge needs, I have a method to achieve exactly what you need. It requires less than 2 weeks in fact, as long as you know exactly what you want to capture. If you don't know exactly, domain knowledge can be captured at any level of granularity, and core knowledge extracted from it in a very-simple exercise that requires minutes to hours, and not days or weeks.
No steep learning curves, and the method overcomes resistance to knowledge sharing by not making the slightest issue about it. Once the knowledge is captured, the same output from the non-computerised method is used to transfer that knowledge to replacement employees. In addition, the same output is also used to derive many other management benefits from the knowledge.
Unfortunatley, this method is not available via any company or website, as I developed it over many years and has tested it as extremely efficient and have not gone commercial with it yet.
I am still developing it further as a comprehensive toolset, but the 2 methods I have are tailor-made to solve the problems you, and many other corporations are facing. Please contact me offline if you need to know more.
