When I wrote my dissertation I was very surprised that very few authors ever defined what a business or a business model was though the term was crucial for their work. I compiled a list of authors that have defined the term but also did quite substantial work on the term. The text you find at http://www.business-model-innovation.com in the English speaking section.
I just came back from a workshop from the University of Lausanne in Switzerland just on that subject. We agreed more or less on the parts every business model should have. The papers will be at the page as well.
